What you want:

  • 1 giant avocado
  • 3 eggs
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened dutch-processed cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Combine the avocado, applesauce, maple syrup and vanilla extract in a blender of meals processor. Blend till elements are well-combined and combination has no clumps. Transfer to a big bowl and blend in eggs. Add the coconut flour, cocoa powder, baking soda and sea salt and stir till all elements are well-mixed.

Add the batter to a coconut oil-greased 8×8 inch baking dish and bake in a pre-heated oven (350F) for 20-25 minutes. Allow to chill for at the very least 20 minutes. Cut into squares and luxuriate in!

Grilled Honey and Lime Pineapple

  • 4 tablespoons unsweetened shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • Coconut ice cream or sorbet

Slice the pineapple into 3/4 inch slabs. This makes about 8 items. You can select to maintain the pores and skin on or not, relying in your choice. Combine the honey and lime juice in a bowl and brush the combination onto the edges of every slab of pineapple.
